Smoked Salmon Spread

We are fortunate to have enough fresh salmon to smoke a portion of it to enjoy year round. I prefer our personally smoked salmon for this recipe, but you can purchase canned salmon from the local cannery and it will taste delicious. This salmon spread is handy to make ahead and is a great appetizer when friends gather.

I like to prepare the filling for the Chimichangas ahead of time and pop in the refrigerator until I am ready to fry them.  They taste great when served warm after setting for a few minutes on a couple of paper towels that absorb some of the cooking oil.

Wild Albacore Tuna Fish Tacos

I have our fresh caught Albacore tuna canned at the Sportsmen’s Cannery.  Tuna can be purchased at your local grocery store but I highly recommend finding a cannery for fresh canned Albacore tuna. The solid white gourmet fillets are canned naturally, no water or oil is added.

Ideally you want to clean, vacuum seal and freeze fish within 24 hours to insure that your fish tastes fresh when you are ready to prepare it.  I always try to set aside a portion of fish for a fresh cooked meal.  There is nothing better than taking freshly caught, never frozen fish and cooking it within 24 hours.  I also use this recipe as preparation for my Breaded Cod Fish Soft Tacos Recipe.
