I have our fresh caught Albacore tuna canned at the Sportsmen’s Cannery. Tuna can be purchased at your local grocery store but I highly recommend finding a cannery for fresh canned Albacore tuna. The solid white gourmet fillets are canned naturally, no water or oil is added.
Ingredients
- 1 7.5 ounce can Albacore tuna
- 1 small jar of green chile verde sauce
- 1 package of corn tortillas
- 1/4 head of lettuce-shredded
- 1 bundle of fresh cilantro-chopped
- 2 small tomatoes-chopped
- 1/4 pound cheddar or pepper jack cheese-grated
- 1 avocado-sliced
- 1 pint sour cream
- 1 small jar or deli fresh salsa
Preparation
- This is a very quick and easy dinner so I like to prepare my garnishes first and set aside.
- Drain the canned tuna and place in a small frying pan with enough green chile verde sauce to heat and flavor the tuna. This will only take a few minutes to heat.
- Heat corn tortillas on griddle or in another frying pan.
- Using two tortillas per taco, spoon tuna into warm tortillas and serve with desired garnishes.
Yield: Serves 2-3 (approx. 4-6 tacos)
