Ingredients
- 16 pieces prepared breaded cod fish using Breaded Cod Fish Fry Recipe
- 4 large burrito size flour tortillas
- 3 cups shredded cabbage (3 color deli coleslaw bag mix works great)
- 1 cup mango salsa (purchased at your local grocery store)
- 1 cup grated pepper jack or jack cheese
- 4 green chive onions
- 1 ripe avocado (sliced)
Preparation
- With kitchen scissors cut green chive onions into 1/8 in pieces. Stir together with cabbage and mango salsa, set aside.
- Place 1/4 cup grated cheese on each tortilla. Heat tortillas in microwave or on griddle long enough to melt cheese.
- Place 4 pieces of breaded fish along the center of each tortilla.
- Spoon cabbage mixture on top of fish, top with sliced avocado and fold tortillas burrito style.
Yield: Serves 4
